
Beef with eggplants
Description
This recipe for beef with eggplants allows for variations. Personally, I like serving this meat with a side dish, such as potatoes, so I add plenty of broth—this way, you get both tender meat and a delicious sauce. 1. Cut the meat into small pieces, place in a saucepan with vegetable oil, and simmer together with the onion over low heat until partially cooked.

2. Meanwhile, separately fry the eggplants in thin slices and minced mushrooms in a dry skillet (or with a minimum of oil), and also fry a few mushrooms whole.

3. Now add the fried sliced mushrooms to the almost ready meat, then a layer of eggplant, garlic cloves, and basil.

4. When all the ingredients have simmered together, add broth or water to cover the eggplants. Now add the mushrooms whole and the sliced pepper. Simmer until the pepper is tender.
