
Beef with quince
Description

First, prepare the marinade for the beef. Mix olive oil with vinegar, and squeeze in the juice of half a lemon. Now add all the spices: cloves, mace, garam masala, cumin, cloves, star anise, black peppercorns, bay leaf, ajwain, and Provence herbs. Pour the marinade over the meat.

Rub the beef well, working the marinade into the meat, and let it sit for at least 1 hour. After that, cut the meat into small pieces.

Now prepare the side dish. Peel and slice the onion into half-rings. Wash the quince and cut it into cubes. Heat a little oil in a frying pan. First sauté the onion until translucent, then add the quince. Fry for about 10 minutes.

Meanwhile, sauté the meat in another skillet. Heat vegetable oil and add the beef. Cover the skillet with a lid immediately for 15 seconds, then remove the lid right away. Keep cooking over medium heat.

Sear the meat for 6 minutes on one side until the marinade evaporates. Then flip to the other side and cook until the beef is no longer pink.

After the red juice stops coming out of the beef, combine it with quince and onion. Cover the dish with a lid and simmer over low heat for another 10 minutes.

Season and pepper the dish 5 minutes before it's done. Mix well. Serve with fresh herbs.
