
Sicilian-style beef
Description
Beef prepared according to this recipe turns out aromatic, tender, soft, with an incredibly delicious sauce. If you have a glass of dry red wine, add it—the sauce will be even more delicious.

Prepare all the necessary ingredients. Clean the beef from films and tendons. Wash the vegetables, peel the onion and garlic.

Cut the tomatoes into quarters, add 2 tablespoons of olive oil, season lightly with sea salt, pepper, add fresh rosemary and chopped garlic clove, then mix.

Pour the remaining oil into a heated skillet, add the beef cut into large pieces, and sear on all sides until a nice golden-brown crust forms.

Transfer the beef to a warm plate, and in the same oil, add the finely chopped onion, remaining garlic, and fennel seeds. Sauté for about two minutes over medium heat until softened.

Pour in the broth, add the olives, and season with chili pepper to taste. At this stage, you can also add 150 grams of red wine, if available. Heat for one minute.

Return the beef to the pan, add the remaining rosemary, cover with a lid, and simmer over low heat for an hour or slightly longer. The meat should be tender and easily shred into fibers. You can also add a pinch of dried oregano.

Add tomatoes, sauce, salt and pepper to taste, and simmer for another 10 minutes. By the way, instead of fresh tomatoes, you can use sun-dried tomatoes—they will make the dish even more delicious.

Serve the ready Sicilian-style beef in the same skillet in which you cooked it.
