We prepare the "Béchamel" sauce. In a heavy-bottomed saucepan, melt the butter, add salt and place a garlic clove (you can crush it with a knife, but do not chop). Once the butter has heated, add flour and a pinch of ground nutmeg, quickly stirring with a spatula. While constantly stirring, gradually pour in the cold milk. As soon as the sauce thickens, remove it from the heat.
