Here is an amazing recipe that yields cheese that is very tasty, tender, and airy. It can be served warm or chilled.

1. I would never have thought that this cheese could be made at home so easily. For this we will need milk, kefir, an egg, lemon, salt, and sugar.

2. Pour the milk into a saucepan, place over heat, and bring to a boil. In a separate container, heat the kefir in a double boiler to 40°C. When the milk boils, remove from the heat and pour in the kefir.

3. Add salt and sugar directly to the milk. Determine the amount yourself. The recipe calls for one teaspoon.

4. Whisk or mix the kefir with the milk using a whisk or mixer (the kefir should curdle).

5. Then take a container and cover it with several layers of cheesecloth. Pour in the resulting mixture and hang it so the whey drains into this container.

6. While the whey is draining, prepare the sauce: whisk the egg with the juice of half a lemon.

8. Whisk the cottage cheese with the sauce until smooth and homogeneous.

9. Then transfer the finished cheese into a jar and leave it in the refrigerator for 10 hours. In this case, lemon juice acts as a preservative. The whey can be stored in the refrigerator or freezer. It makes excellent dough for pies or pancakes.
