1. Before preparing the hot vinaigrette, wash the carrots, beets, and potatoes. Remove any dirt, taking care not to damage the skin of the vegetables. Pour cold water into a pot, add the vegetables, and boil until cooked.

2. Take beet and carrot. Peel them. Cut into small cubes up to 1 cm per side. For vinaigrette, it's always better to chop the vegetables finely.

3. Peel the onion. Cut it into small pieces. Pour a little vegetable oil into a frying pan. Add the onion and start frying over low heat.

4. Peel the boiled potatoes. Cut them into small pieces, approximately the same size as the beets and carrots.

5. Peel the garlic. Chop it finely in a way convenient for you. Prepare the coriander. It can be crushed in a spice mortar.
