
Pea Pâté
Description
Making pâté has never been this easy. All you need to do is boil the peas, blend them in a blender, add spices to taste, and leave overnight in the refrigerator—and an incredibly healthy and delicious dish is already on your table! The pâté works great as an appetizer, as an accompaniment to sandwiches and salads, or as a standalone dish. The recipe calls for vegetable oil, but I strongly recommend using olive oil; it makes the pâté’s flavor much richer. You can serve it warm or chilled.

1. Pour the peas into a colander, rinse well under running water, and transfer to the pressure cooker bowl. Add 3 cups of cold water. Cook in the pressure cooker for 10 minutes.

2. If you are not cooking in a pressure cooker, first cover the peas with water and leave for 5–6 hours, then drain the water, rinse the peas, and cover with cold water. Cook over low heat for 40–90 minutes (depending on what kind of peas you have).

3. Without cooling, blend the pea mixture with a blender, add minced garlic, ground coriander, nutmeg, dried marjoram. Add vegetable oil and beet juice.

4. Season with salt and blend again. Grease a pâté container well with vegetable oil and pour the pea mixture into it. Cover with a lid and refrigerate overnight.
