Pea pancakes with onions

Description

Delicious baked goods for the whole family. In the ingredient list, I've included everything needed for the classic recipe with one exception: instead of water, I'll be using kefir—this substitution will make the pancakes even tastier! And if plain fried onions aren't enough for you, I suggest preparing onion confit to serve with the pea pancakes. How to make it? Here's how: slice the onion into half-rings and sauté in a mixture of vegetable and butter. When the onion becomes translucent, add 2 tablespoons of wine vinegar and a pinch of salt and pepper. Simmer until golden, by which time the liquid will have evaporated. Stir in a teaspoon of liquid spring honey, warm through, then remove from heat. Do try this version! P.S. Cooking time listed does not include the soaking time for the peas

    1. Prepare the ingredients. Sort the peas carefully. Tiny stones are often found among them and should be removed.

    2. Wash the peas thoroughly until the water runs clear. Cover with water and let soak for 4 hours if using split peas. If using whole peas, soak for an additional 2 hours.

    3. After 4 hours, be sure to change the water for fresh one. Pour enough water to cover the peas by about two fingers above. Add sugar and cook until soft. Thanks to the prior soaking, the peas will cook very quickly.

    4. Some of the water has been absorbed, and some has evaporated. Do not drain anything, but if there is too much water left, drain off some of it. Puree the peas with an immersion blender.

    5. The mixture should be smooth and uniform, not too thick. Let the puree cool slightly.

    6. Add salt, ground black pepper, and egg. Mix well with a whisk.

    7. Pour in the kefir, then mix the pea mixture again.

    8. Add the flour with the baking powder and mix again with a whisk until the mixture becomes smooth and lump-free. The dough should be moderately thick and tender.

    9. Ready! Proceed to frying the pancakes.

    10. Lightly grease a hot crepe pan with a silicone brush. Pour the batter using a tablespoon or ladle. Fry until golden brown.

    11. Use a spatula to flip the pancake to the other side and cook until done. Fry all the pancakes and stack them in small piles.

    12. Peel the onion, slice it into large half-rings, and fry in vegetable oil with a pinch of salt and pepper.
