
Pea porridge with smoked ribs
Description
The dish is prepared without unnecessary complications. Soak the peas, then place them in a deep skillet, cover with water, and bring to a boil. Sear the ribs and add them to the almost cooked pea porridge. Simmer until fully cooked. Thick sour cream goes perfectly with pea porridge and smoked ribs. Don't forget to garnish the plate with a sprig of fresh herbs. Serve the dish immediately.

Soak the peas in water for several hours, then rinse thoroughly under running water. Next, place them in a deep skillet and set over heat. Pour in water—about 4 cups of water per 1 cup of peas. If you have a cast-iron casserole dish, that would be an ideal option. Season with salt to taste.

While the peas are cooking, take smoked pork ribs and chop them into small pieces.

Chopped ribs should be fried until lightly browned on all sides. You need only a small amount of vegetable oil, literally a drop on a dry skillet.

After browning the ribs, add them to the almost cooked pea porridge. Also pour the fat from the frying pan into the peas.

Add the ribs, cover the pan or brazier with the porridge with a lid. Simmer for about 30 minutes.
