Pea porridge cooked in water

Description

The recipe won't take much time. This side dish is perfect because it tastes great both hot and cold, especially with meat or sour cream. The flavor of the porridge will improve significantly if you add a couple of pinches of dried thyme or a couple of fresh thyme sprigs while cooking. Be sure to soak the peas before cooking to reduce cooking time. Serve hot.

    Prepare the listed ingredients. Use dried steamed peas, not fresh ones, to cook the porridge.

    Sort through the dried peas, place them in a deep container, and cover with cold water. Rinse several times. Pour warm water over them and let soak for 2 hours to allow swelling.

    Transfer it to a saucepan or cauldron, ladle, pour in hot water and add salt. Add bay leaves and place the container on the stove. Bring to a boil and remove the foam that forms. Cook the porridge for about 30-40 minutes.

    After this, drain the water and pour in about 1 cup of boiling water again. Add two pinches of baking soda, but no more! Reduce the heat and stir the porridge, as the soda will produce a lot of foam. Adding baking soda helps soften the tough outer skin of the legumes, allowing them to cook faster, but only if stirred continuously. Cook the porridge for another 10 minutes until done, tasting for doneness.
