First, we need to clean the fish, so we scrape off the scales and carefully cut off the head, tail, and fins. Next, we fillet the fish, opening it like a book, and remove all the bones from the salmon. Make shallow cuts on the fillets and sprinkle the fish with salt and sugar, then set it aside for now.

Thaw the puff pastry and roll it out into a rectangular sheet. Using the dull side of a knife, divide it into three equal parts. Then, cut each of the side sections in half again, and slice the outermost parts into strips, as shown in the photo.

Then sauté the sliced mushrooms in heated vegetable oil for 5–7 minutes, and mix them with chopped spinach leaves. Lightly season the filling with salt and pepper. Once the filling has slightly cooled, place it on one side of the fish.
