Prepare the ingredients. You will also need a masher to knead the corn.

Mix coarse flour with salt in a deep heavy skillet (preferably cast iron).

Add water, place over low heat, and cook for about 20-25 minutes, stirring with a masher.

Then add more finely ground cornmeal (4 tbsp), continue cooking, stirring thoroughly for another 5–7 minutes over low heat. The gomi should become thick, as shown in the photo.

Add pieces of butter to the hot gomi and place pieces of suluguni on top. Serve hot.
