
Cabbage rolls with Korean-style carrots in fermented cabbage
Description
Each time you prepare cabbage rolls, be careful not to overcook the cabbage. Otherwise, the cabbage leaves will crack when you wrap the filling. Such cabbage rolls can be stored in the refrigerator for up to 2 weeks. So try to make a larger batch right away.

1. Prepare the cabbage. Cut off the core and place the head into a large pot of water. Add salt (a teaspoon is enough), a teaspoon of oil, and 2–3 teaspoons of vinegar. Cover the pot with a lid and heat until the water comes to a boil.

2. Checking the doneness of the top leaf with a fork, separate the cabbage into leaves using a dessert knife and fork. Then cover the pot with a lid and let it sit for about 15 minutes.

3. Grate the carrot on a Korean-style carrot shredder. Add the spices: ground red pepper, turmeric, basil, "Ogonëk" chili pepper, squeeze in a whole garlic clove, and season with salt (2 teaspoons is enough). Pour in two tablespoons of sunflower oil and mix thoroughly, pressing with your hands until the carrots release their juice.

4. Cut the cabbage leaf in half lengthwise along the "vein," then remove the "vein" itself. Then cut the halves once more. The cabbage rolls will be small, but neat.

5. Place the carrot on the cabbage leaf starting from the narrowest edge, so that it sticks out slightly on the sides. Roll the cabbage roll tightly. Arrange all the cabbage rolls in a deep container and cover them with whole cabbage leaves on top.

6. Pour the marinade over the cabbage rolls. You can also add the juice from the Korean carrot to the cabbage rolls. For the brine, take 1 bay leaf, half a cup of sugar, 2 tablespoons of salt, half a cup of oil, and 1/3 cup of vinegar per liter of boiling water. Mix well and pour over the cabbage rolls. Place a plate on top, then put a jar filled with water on the plate. Once the brine has cooled, place the dish under pressure in the refrigerator for 24 hours.
