Unlike rice cabbage rolls, these turn out more tender and juicy. Otherwise, the cooking process remains the same. The finished dish can be served at the table.

    Rinse the bulgur and pour boiling water over it, making sure the water completely covers the grain. Cover with a lid and let it steep for 15–20 minutes.

    Place the minced meat into a deep bowl.

    Drain the bulgur in a colander to remove all the water, then add it to the meat mixture. Grate the onion on a coarse grater, and add salt and spices to taste.

    Remove the core from the cabbage and place it in the microwave for a few minutes, until the leaves become soft and can be easily separated. To make the leaves even more tender, I blanch them in water for 2-3 minutes. Then remove them and let the water drain off.

    Place the filling onto a boiled cabbage leaf. Tightly roll the sides first, then the center, forming a cabbage roll. Repeat to form all the cabbage rolls.

    Separately mix tomato paste and sour cream. Add a pinch of sugar and salt to taste, then slowly pour in the required amount of water left from boiling the cabbage leaves. Pour the resulting sauce over the cabbage rolls, ensuring the liquid almost completely covers them. Simmer covered over low heat for about 30-40 minutes.
