
Transcarpathian-style cabbage rolls
Description
The dish is prepared without unnecessary complications. Cabbage roll recipes vary across different countries, and there are countless versions in cookbooks. These Transcarpathian-style cabbage rolls are distinguished by the addition of mushrooms to the sauce and an unusual way of cutting the meat. In this recipe, pork cutlets are wrapped with rice in cabbage leaves. The finished dish can be served at the table.

1. First, we need to deal with the cabbage. Put the cabbage head into boiling water and remove the leaves one by one. Meanwhile, you can boil the rice until half-cooked.

2. Finely chop the mushrooms and place them in a frying pan to cook until done. At the end of frying, add finely chopped onion and tomato paste. Sauté, then add 300 ml of water, bring to a boil, and remove from heat. While the sauce is simmering, slice the meat and lightly tenderize it. This is an unusual way of preparing cabbage rolls, as traditionally minced meat is used.

3. Wrap the filling as follows: place the cutlet on the cabbage leaf, add rice on top, and wrap it into a little parcel.

4. Place the cabbage rolls into a pot or casserole dish. Put bay leaves, garlic, and whole peppercorns on the bottom.

5. The sauce can be prepared in two ways—either with flour or without it. Pour the sauce over the cabbage rolls and simmer until cooked through.
