
Armenian-style stuffed cabbage rolls
Description
1. First, prepare the leaves. They should be carefully selected to ensure the Armenian-style stuffed grape leaves turn out juicy and tender. It's best to use young, not overly large leaves. Blanch them in boiling water for 2–3 minutes, then drain and dry in a colander or on paper towels. By the way, canned grape leaves are also available in stores. 2. For the filling, it's best to use lamb or a mix of beef and lamb. Wash the meat, dry it, and grind together with onion using a meat grinder. Optionally, you can also add garlic to the meat mixture. 3. Wash the herbs, dry them, and finely chop with a knife. Add to the filling. 4. Season with salt and pepper to taste, add spices if desired, and mix thoroughly. 5. Place a small amount of filling onto each grape leaf and carefully roll it up. 6. Place the rolls in a frying pan with vegetable oil and sear on both sides. Then transfer them to a saucepan or oven-safe dish. 7. Armenian-style stuffed grape leaves can be simmered in either tomato-based or sour cream sauce to keep them moist and flavorful. 8. Once all the rolls are seared, cover them with a plate inside the saucepan and let them simmer over low heat until fully cooked. The plate will help the rolls retain their shape.
