
Stuffed Cabbage Rolls for Winter
Description
A homemade winter preserve. For the filling, you can use any combination of vegetables you like. These canned stuffed cabbage rolls make an elegant side for any meat dish in winter—quick to heat and serve. Jars keep for up to a year in a cool place.

Lay out all the ingredients on the table at once for convenience. Wash the vegetables. Wash the canning jars and lids with baking soda and sterilize them using your preferred method.

In a large pot, bring the water to a boil and submerge the head of cabbage in it for a few minutes.

After that, carefully separate the cabbage leaves.

Peel the carrots and grate on a coarse grater.

Peel the onion and dice it into small cubes.

In a large skillet, pour in vegetable oil and add the onion and carrot. Sauté over medium heat, stirring regularly with a spatula, until the vegetables are tender.

Remove the seeds from the sweet peppers and wash them under running water. Cut the pepper flesh into small cubes.

Add the sliced pepper to the pan with the onion and carrots.

Continue frying everything together for another 5–8 minutes.

Now place one cabbage leaf on a flat surface and put 2–3 tbsp. of vegetable filling in the center of the leaf. Fold the leaf into an envelope shape, the way you usually roll stuffed cabbage rolls.

So shape the stuffed cabbage rolls from all the cabbage leaves and the vegetable filling.

Pack the stuffed cabbage roll preparations tightly into prepared sterilized jars.

Prepare the marinade. Pour water into a saucepan, add salt and sugar, and bring to a boil over medium heat. Add vinegar to the boiling marinade and remove the saucepan from the heat.

Pour hot marinade over the stuffed cabbage rolls in the jars, filling them to the very top.

Cover the jars of stuffed cabbage rolls with lids and place them in a large pot of water (it is advisable to line the bottom with a kitchen towel first). Set the heat to medium and wait until the water comes to a boil. Then sterilize the preserves for 15–20 minutes.

Then remove the jars of stuffed cabbage rolls from the water, seal them tightly with the lids, turn them upside down, wrap them in a thick blanket, and leave them to cool slowly overnight.

In the morning, the ready jarred preserves can be moved to the pantry for storage.
