Cabbage rolls from frozen cabbage
Description
The recipe won't take much time. Cabbage rolls made from frozen cabbage leaves turn out tender and juicy. You can prepare the cabbage in the fall and enjoy delicious cabbage rolls all winter long with minimal effort. Alternatively, you can freeze the cabbage the night before; the next day, simply take it out and let it thaw gradually at room temperature for about an hour. The cabbage leaves prepared this way won't tear or break. At the same time, they are so tender and juicy that you'll be pleasantly surprised by the result. Keep this recipe in mind. Serve hot.
Instructions
- 1
Step 1

Prepare all the ingredients.
- 2
Step 2

In addition to the main ingredients, we will of course need cabbage. I freeze it as follows: remove the core from the cabbage head, place 2 tablespoons of salt into the hollow, put the cabbage into a pot and pour water over it. After it comes to a boil, turn the cabbage over and cook for 10–15 minutes. Without opening the lid, let the cabbage cool completely in the brine.

Step 3

Then I separate the cabbage head into individual leaves, transfer them into a bag, tie it tightly, and freeze. Before you start preparing the cabbage rolls, let them sit at room temperature for a while. Once they become soft enough to be rolled, you can start making the cabbage rolls.

Step 4

Place the ground meat in a deep bowl. It's best to prepare mixed ground meat yourself.
- 5
Step 5

Add the onion and carrot, sautéed until soft, to the minced meat.
- 6
Step 6

Then add the diced tomatoes.
- 7
Step 7

Squeeze in the garlic, add the rinsed rice, salt, and spices to taste.
- 8
Step 8

Mix everything well. The filling is ready.
- 9
Step 9

For the sauce, prepare sour cream, tomato paste, and water.
- 10
Step 10

Place a little filling on each cabbage leaf, fold in the sides, and roll up.
- 11
Step 11

I don't pre-fry the cabbage rolls beforehand, as the cabbage leaves themselves are already tender enough.
- 12
Step 12

Place the remaining, possibly small or defective leaves, on the bottom of the pot or cauldron.
- 13
Step 13

Place the cabbage rolls on top.
- 14
Step 14

Mix the sour cream and tomato paste, salt if necessary, add 1-2 pinches of sugar, and gradually pour in the water in a thin stream. Stir, pour the sauce over the cabbage rolls, bring to a boil, then simmer covered over low heat for about 40 minutes.
- 15
Step 15

Cabbage rolls made from frozen cabbage are ready. Mashed potatoes will be the perfect side dish.
