
Beet Green Stuffed Cabbage Rolls

Beet green stuffed rolls — an unusual dish rarely found on our tables. However, this doesn't mean it's neither tasty nor healthy. On the contrary, it's very nutritious and delicious, especially when made with meat. Enjoy!

Wash the beet greens thoroughly. Select the most beautiful and intact leaves and pour boiling water over them.

Wash and peel the vegetables—potatoes, carrots, and beets—then julienne them using a Korean-style grater. Slice the onion into half-rings. Sauté until translucent, then add the other vegetables and simmer until almost fully cooked.

Next, remove the leaves from the boiling water, crush or cut out the stems from the greens. Place 1-2 tablespoons of filling into each leaf and carefully roll them up.

Place the stuffed rolled leaves in a thick-bottomed pan, pour over with sour cream and garlic, and simmer over high heat with the lid closed for about 15 minutes.
