
Hollandaise Sauce by Gordon Ramsay
Description
Perfectly complements meat, poultry, and side dishes. Since the sauce takes only about 10 minutes to prepare, you can easily make it for breakfast. The sauce keeps for about a day, but must be stored chilled. Keep in mind that the hollandaise sauce will thicken further upon cooling. Serve cooled or at room temperature.

Prepare the listed ingredients. Use either 5 small egg yolks or 3 large ones.

Place the egg yolks in a double boiler and mix with salt.

Melt the butter for about 1-2 minutes.

Reduce the heat of the water bath to medium and whisk the yolks with vinegar until they thicken, then turn off the heat.

Gradually pour the melted butter into the beaten egg yolks, stirring constantly.

At the very end, when the hollandaise sauce has thickened, season it with pepper and pour in the lemon juice. Mix again and taste for seasoning.

Place the sauce in a custard cup, bowl, or sauce dish and serve warm.
