
Dutch waffles
Description
The baking is simple and quick. The secret of waffles is straightforward. You just need to know a few subtle points. Be sure to add starch to the batter to make the waffles crispy. You can add any flavoring to the batter to give the waffles taste. This doesn't mean the waffles must have a vanilla flavor. It can be strawberry or any other of your choice. Preheat your waffle iron well, but remember that an overly hot waffle iron cooks quickly. Don't leave the waffles on one side too long.

To prepare Dutch waffles, first crack the eggs into a bowl. Add the baking powder.

Add regular and vanilla sugar.

Add mayonnaise and melted liquid butter. I use 67% mayonnaise, and I don't trust lighter or lower-fat versions. I believe that classic mayonnaise isn't very healthy, but it's less harmful than fat-free alternatives. It's unclear what they've replaced the fat with. I used 82% butter.

Beat the mixture until smooth. Mix the flour with the starch. Sift it and add to the dough.

Add the flour in batches, mixing well immediately. The dough will turn out quite stiff.

Divide it into balls. I got 10 such balls.

Waffles can be prepared using an electric waffle maker or a Soviet-style waffle iron. I have the latter type of waffle iron.

Grease the waffle iron with vegetable oil using a brush. Preheat the waffle iron thoroughly. Take 1 ball of dough and slightly flatten it into a small pancake. Do this by hand, just using your fingers. Place the dough pancake in the center of the waffle iron. Close with the second part of the waffle iron—the dough will spread evenly on its own. Cook the waffle on one side, then flip the waffle iron over to cook on the other side.

Remove the waffles from the waffle iron. Stack them on a plate. The waffles stay crispy for a long time because the batter contains starch.
