Instructions
- 1
Step 1

Boil the potatoes in salted water until cooked. Then peel and grate on a fine grater (or simply mash with a potato masher).
- 2
Step 2

Add flour and egg to the potatoes.
- 3
Step 3

Knead a soft dough. The less flour you use, the softer the gnocchi will be.
- 4
Step 4

Divide the dough into portions. Roll each portion into a long, but not very thick, sausage shape.
- 5
Step 5

Now cut each sausage into small pieces.
- 6
Step 6

Using a gnocchi board, create patterns on the dough. If you don't have this tool, use a regular fork.
- 7
Step 7

Next, drop the gnocchi into boiling salted water and cook for about 5 minutes after they float to the surface. Do not add too many at once to prevent the gnocchi from sticking together.
- 8
Step 8

Remove the cooked gnocchi from the water. Melt butter in a skillet and add sage leaves (tear them into pieces by hand).
- 9
Step 9

Stirring, simmer for about 2 minutes, then add the gnocchi. Sprinkle with poppy seeds and grated Parmesan on top. Let it cook over low heat for another 5 minutes.
- 10
Step 10

Transfer the ready gnocchi to a plate and sprinkle with grated Parmesan on top.
