
Glossy chocolate glaze for cake
Description
The recipe won't take much time. The glaze is very easy to prepare, but it needs time to stabilize. This glaze works best for mousse cakes. For other applications, cool the glaze and slightly freeze the cakes. You can substitute glucose syrup with invert syrup; use only high-quality condensed milk. To prevent air bubbles while blending, hold the immersion blender at a 45-degree angle. Serve chilled.

Prepare all the necessary ingredients for making glossy chocolate glaze for a cake.

Soak the gelatin in 30 ml of cold boiled water for 30 minutes or according to the instructions on the package.

Pour glucose syrup and the remaining water into a heavy-bottomed saucepan, then add sugar. Place the saucepan over low heat and bring to a boil, stirring.

Chop the chocolate finely and place it in a tall mixing glass. Add condensed milk to the chocolate.

Add the bloomed gelatin and hot sugar mixture to the chocolate with condensed milk. Blend everything with a blender until smooth.
