
Glaze in a double boiler
Description
The recipe won’t take much of your time. You can use this glaze not only on kulich but on any other pastries. It’s delicate, airy, and very tasty—any sweet tooth will love it. It’s quick and easy to make, and it’s quite economical too. On kulich it looks beautiful and impressive, and kids absolutely adore it. Be sure to try it. You can serve it with tea or coffee.

Prepare all the ingredients according to the list.

Take a deep, clean bowl that can be set over a double boiler. Separate the egg whites from the yolks; you may set the yolks aside—you will not need them. Separate the whites carefully so that not even a drop of yolk gets into the bowl. Add sugar to the egg whites.

Beat the egg whites with the sugar using a blender or mixer until they form a white, stable, airy mass. Place over a double boiler. The bowl must not touch the water.

Cook, stirring constantly, for about 7 minutes. During this time the mixture will become smooth and the sugar will dissolve completely.

Remove the bowl from the double boiler and beat the egg whites again until they reach the desired consistency. The glaze on the double boiler is ready.

The glaze thickens gradually, so you can take your time applying it to all the cooled kulich. Decorate as you like.
