
Chocolate glaze
Description
This amazing homemade chocolate glaze is perfect for both cakes and small pastries such as cupcakes, donuts, and eclairs. Even a beginner in cooking can work with it, so I highly recommend memorizing this recipe. You can use either dark or milk chocolate, and adjust the amount of sugar to taste.

1. Place the cream, water, cocoa, and half of the chocolate into a small saucepan. I recommend using dark chocolate with a high cocoa content. Set over heat and bring to a boil. Stir constantly until you get a smooth, homogeneous mixture. Remove from heat and add the second half of the chocolate (I recommend using chocolate drops). Mix thoroughly.

2. Soak the gelatin separately. It is very convenient to use sheet gelatin in the recipe for chocolate glaze.

3. After slightly cooling the chocolate mixture, add the gelatin. Mix thoroughly until smooth.

4. Whisk thoroughly with a whisk.

5. To avoid any lumps and ensure the homemade chocolate glaze has a perfect consistency, strain it through a fine sieve.

6. That's it, the glaze is ready! If you're not going to use it immediately, you'll need to warm it slightly (to about 44 degrees) before using.
