For our icing, you can use ready-made powdered sugar, but I prefer to make it myself. So, grind the sugar into a fine powder.

I sift the ready-made powder through gauze to ensure there are no lumps left in it.

To the sifted powder, add one egg white and mix everything until smooth.

We should end up with a fairly thick icing. To test it, run a spoon across the surface; if the icing has the right consistency, the line that forms should disappear after 10–12 seconds. If we haven't achieved the desired result on the first try, we need to either add more powdered sugar or dilute the icing with a little water.

Transfer the ready glaze into a cellophane bag.

And cut a corner of the bag.

Now, very carefully and slowly, start outlining the design on our gingerbread. Let it dry completely.

To completely cover our gingerbread, we need to slightly dilute the icing with water. Again, check the consistency: a line drawn on the surface of the icing should smooth out within 3-4 seconds. Now we can fully paint the gingerbread using a brush.

Now let's work on the design. To do this, we dip the tip of a toothpick into the food coloring and mix it with the icing.

And we begin applying a simple design. For starters, plain polka dots will do; later on, you can try something more complicated.
