Glaze for kulich with gelatin, egg‑free
Description
The recipe won't take much time. The sugar glaze on gelatin sets quickly, so to speed up the process you can dip the tops of the cakes in the glaze. In the recipe you will find a simple way to make the thickened glaze soft again. This amount of glaze is enough for 10‑12 small cakes Serve it cooled or slightly warm.
Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Pour a small amount of water (30 ml) over the gelatin. Let it swell.
- 3
Step 3

We pour the sugar into a saucepan and add water. Put it on the heat. Stir while heating. When the sugar has dissolved, remove the syrup from the heat.
- 4
Step 4

Add the bloomed gelatin.
- 5
Step 5

Whisk with a blender. The mixture foams and expands at this point. Add lemon juice and continue whisking for about 3‑5 minutes.
- 6
Step 6

Apply the ready glaze to the cooled kulichs. Do it quickly, as the glaze will thicken in 5–7 minutes.

Step 7

If the glaze thickens faster than the cakes are covered, add 3–4 tablespoons of warm water and blend again with a blender. I had natural juice prepared. When the glaze became thicker, I added 3 tablespoons of red currant juice. The juice gives the glaze a light creamy hue.

Step 8

I have prepared small kulich cakes that were baked in cupcake molds. The glaze on the kulich cakes can be sprinkled with candied fruit, and just before serving, garnish with fresh mint leaves.
