Glazed pork with mango salsa

Description

Preheat the oven and line a baking sheet with aluminum foil. Place the pork on the foil and season with salt and pepper. Pour adobo sauce over the meat and sprinkle with brown sugar. Bake for 8 to 10 minutes. Let rest for 5 minutes before serving. Meanwhile, prepare the salsa. Finely chop red onion and jalapeño pepper. In a bowl, combine mango, onion, jalapeño, and lime juice. Season with salt and pepper, and mix well. Serve the pork patties with the salsa and a salad of arugula and cucumbers.
