
Giant cookie
Description
Perfectly pairs with tea and coffee. "Samoa" cookies are very popular in the USA, where they are usually sold by girl scouts. These cookies with caramel-coconut filling turn out delicious and unique to us. After trying them once, my children now often ask me to make this treat. That's why I decided to share the recipe with you. The baked goods are ready. Serve at the table.

For the base, knead the dough from flour, powdered sugar, and softened butter. Wrap it in plastic wrap and refrigerate for 20 minutes.

Preheat the oven to 180°C. Roll out the dough into a thin layer on parchment paper and cut out a circle. Use a glass to make a round hole in the center. Prick the dough with a fork. From the dough scraps, cut out cookies of any shape.

Bake in a preheated oven for 20-25 minutes. Adjust according to your oven.

For the filling, we will need: chocolate, caramels, milk, salt, and coconut flakes.

Break the chocolate into pieces and melt over a water bath. Spread a layer over the cooled shortbread ring and place in the refrigerator. Reserve a little melted chocolate for coating the caramel shavings.

Spread the coconut flakes on parchment paper and bake in a preheated oven at 180°C for 5–7 minutes until light beige in color.

On a dry skillet, prepare the salted caramel: melt caramels, milk, and salt until smooth. Stir the caramel occasionally with a silicone spatula. Add only a tiny amount of salt—it should merely enhance the sweetness of the caramel.

Flip the base with the chocolate side down. Spread part of the caramel onto the shortbread ring. Work quickly so the caramel doesn't have time to set.

Mix the remaining part with the coconut flakes.

Place the caramelized coconut flakes on the ring. Pour melted chocolate on top.
