
Carbonated apple cider
Description
The drink is quick and easy to prepare. It is recommended to use ripe and aromatic apples of different varieties, as this will make the flavor more interesting. This low-alcohol natural beverage is made through natural fermentation without adding yeast. It has a pronounced apple aroma and a golden hue. Well-balanced, with a soft honey flavor and a fruity aftertaste with a hint of tartness. The drink is ready to serve.

Prepare the ingredients for making apple cider. Wash the jar thoroughly and dry it. Wash store-bought apples under running water. Instead of Jerusalem artichoke syrup, you can use honey or sugar. Fresh ginger can be replaced with dried, but not ground.

Cut the apples into quarters, remove the stems and cores with seeds. Transfer the apple slices into the prepared jar. Add ginger and pour in the Jerusalem artichoke syrup (or honey, sugar). Add water, leaving space for fermentation.

Cover the jar with gauze and place it in a warm spot away from direct sunlight.

Depending on the temperature, a light foam will begin to form on the surface by day 1-3. Close the jar tightly with a lid and leave it for another 2-3 days in a warm place. After 4-6 days, when opening the jar, vigorous gas release occurs inside—this means the drink is ready for bottling. For bottling, use clean, dry bottles with swing-top stoppers.

Strain the drink and pour it into bottles. For stronger carbonation, add 1 tsp of sugar, honey, or syrup to each bottle with the cider. Leave the bottles at room temperature for 24 hours, then transfer and store in a cool place or in the refrigerator.
