Step 1

For the dough, dissolve the yeast in warm water and add one cup of flour. Stir and let it sit in a warm place for 30 minutes. Mix the egg with sugar and salt until well blended. Melt 100 g of butter and let it cool. Add the egg mixture to the butter. Pour this egg and butter mixture into the sponge, then gradually add flour (2–2.5 cups) and knead the dough until it's not too stiff. Let it rise until doubled in size. Then divide it into 5–6 small balls.

Grate 200 grams of frozen solid butter on a coarse grater, add powdered sugar and another 2 cups of flour. Rub everything together into crumbs.

Roll out the dough into thin flatbreads. Divide the filling into 6 portions. Melt another 50 grams of butter and brush it onto the flatbreads. Place the desired amount of filling in the center of each flatbread.

Lift the edges of the flatbread and seal tightly.

Turn the dough seam-side down and roll it out to a thickness of 1.5 cm. Prick several times with a fork and brush the surface with egg yolk. Place onto a greased baking sheet. Bake in a preheated oven at 180°C for 30 minutes.
