
Hamburger with Porcini Mushrooms
Description
The recipe won't take much time. This dish is very easy to prepare. In Italy, it is made very often. When finished, you get very aromatic and tasty cutlets.

1. Mix the two types of ground meat and knead thoroughly. Pork ground meat can be replaced with turkey meat; it is less fatty. Zucchini and mushrooms will still provide enough juice for the burgers.

2. Slice several mushrooms lengthwise into thin slices. Lightly sauté the middle parts, and set them aside to garnish the burgers.

3. Dice the remaining mushrooms, grate the zucchini on a coarse grater, and fry everything together over low heat for 3–5 minutes. Let the mixture cool and mix it with the ground meat.

4. Season the mixture with pepper and salt, then shape it into flat, round patties in the shape of hamburgers.

5. Wrap each hamburger individually in a strip of pancetta (crosswise). You can also make it with sliced bacon or cured ham.

6. Over medium-low heat, fry the hamburgers on both sides, cover them with a lid, reduce the heat, and cook for another 3-5 minutes. Serve with vegetables and herbs.
