
Galettes with cottage cheese and peaches

In a deep bowl, combine baking powder, flour, and salt. Grate cold butter into the mixture using a coarse grater. Rub everything together into crumbs.

Then add sugar and cottage cheese. Knead the dough. Leave it in the refrigerator for 2 hours, covered with plastic wrap.

While you work on the filling. Cut the fruits into slices. Then mix them with starch, sugar, and citric acid.

Roll out the ready dough into a flatbread (or flatbreads) 0.5 cm thick. Place them on parchment paper on a baking sheet.

Spread the remaining starch over the flatbread, leaving a 3 cm border around the edges. Place the fruit filling on top.

Bring the edges of the dough together in the center. Add sugar to taste if desired.
