Galette with persimmon and pudding

Description

Delicious pastry for the whole family. You can use slightly underripe persimmon for this galette, in case you've bought such. You can shape the galette any way you like; I used a regular round baking pan for pies, but a standard baking sheet will work as well. You can add other fruits to the persimmon— I think they will only enhance the flavor. The pastry is ready. Serve it at the table.

    Peel the persimmon, cut it into small pieces, and sprinkle with lemon zest.

    Prepare the dough: put the butter in the refrigerator in advance, then grate it on a grater.

    In another bowl, mix wheat flour, a pinch of salt, and granulated sugar. Add cold water to the butter and incorporate the dry ingredients.

    Knead the dough with your hands and shape it into a ball, wrap in plastic wrap and refrigerate for half an hour. Mix the dry pudding into a glass of milk.

    Take the dough out of the refrigerator, roll it out into a thin layer, place it into a baking pan, shape the edges, and prick the dough with a fork.

    Place the persimmon pieces in a baking dish and pour the diluted pudding over them. Bake in a preheated oven at 170 degrees for 40 minutes.
