Description

Homemade treats for tea. I love galettes! Not only are they delicious, but they're also incredibly easy to make. What other pie can be lopsided and still be perfectly stylish? Serve warm or chilled. Perfect with tea.

    I always make shortcrust pastry in a food processor—it's very convenient, quick, and effective. Put the sifted flour into the processor bowl, add bran, sugar, salt, and baking powder. Pulse until the mixture turns into crumbs. Then add the egg yolk and turn on the processor again. Gradually add a spoon or two of ice-cold water until the dough comes together into a ball. Wrap the dough in plastic wrap and refrigerate—not freeze—for half an hour.

    Slice the peeled apple and pear into thin slices. Rinse the raisins and pour over brandy. Heat in the microwave for a minute to let the brandy soak into the raisins. Grate the zest from half a lemon, squeeze a spoonful of juice and sprinkle over the fruit. Mix the fruit with the zest and raisins, then add a pinch of cinnamon.

    Roll out the dough between two sheets of parchment paper into a circle 1 cm thick.

    Using a round bowl of suitable diameter, mark a circle in the center. This will make it easier to arrange the filling.

    Lightly dust the center with starch and place the filling in a small mound. Pinch the edges of the galette, leaving the center open. Transfer the galette, along with the parchment paper, onto a baking sheet and bake in a preheated oven at 200°C until done.

    Cool the galette on a board and dust with powdered sugar before serving.
