
Galette with black currants
Description
The pastry is simple and fast to bake. Your family is sure to love the colorful taste of this galette if you serve it cooled with tea or coffee. Remember that black currants are tart, so do not cut back on the sugar called for in the recipe, or the pie will taste sour. Serve warm or chilled. Perfect with tea.

Prepare the ingredients listed. If using frozen currants, thaw them in advance.

Pour the wheat flour into a deep bowl. Cut the chilled butter into it.

Crack the chicken egg in, add salt and 2 tbsp granulated sugar. With a fork, mix everything so the butter combines with the flour.

Gather the dough into a ball and refrigerate for 10 minutes.

Meanwhile, rinse the currants and drain off all liquid. Add sugar and Jelfix or starch and mix thoroughly. The Jelfix or starch will thicken the juice released by the berries so the dough does not stay raw inside.

Roll out the dough into a round sheet. Place it in a baking dish or on a baking sheet.

Place the prepared filling in the centre of the dough.

Fold the dough edges inward carefully, but not completely, leaving the filling partly exposed. Preheat the oven to 200°C and bake the galette until golden, about 30–35 minutes. Baking time depends directly on how thick the rolled dough is.

Transfer the baked galette to a plate and let it cool until the berry filling has set.
