
Cheese pastry tart

For the dough, sift the flour, add crumbly dry cottage cheese and chopped cold butter. Salt all the ingredients and rub them into crumbs.

Knead a firm and elastic dough. It should not stick to your hands. Let it rest for half an hour. You can wrap the dough in plastic wrap and put it in the refrigerator.

Boil three chicken eggs hard, then peel and chop them with a knife. Place the chopped eggs in a bowl. Add grated hard cheese of any kind (to your taste), chopped fresh herbs, and sliced green onions. Crack in one raw egg, add cream cheese, season with salt and pepper, and mix everything thoroughly. This will be the filling for the galette.

Remove the dough from the refrigerator and roll it out into a flat round. It should not be too thick. The dough is quite dense, so it will hold up well under the weight of a heavy filling. Place the egg-cottage cheese mixture with herbs in the center.

Wrap the dough of the tart so that the filling stays in the center, forming distinctive edges. Pinch the edges well, then brush with raw egg yolk and sprinkle with sesame seeds or flaxseeds. Bake the tart for thirty-five minutes at 180 degrees until fully cooked.
