
Galette with apple-potato filling
Description
Homemade baked treats for tea. Galettes – large French cookies, flat cakes that replace bread. Serve cooled or slightly warm.

1. Chill the butter and cut it into pieces. Sift together the flour, corn flour, and salt. Add the butter and mix until the mixture resembles crumbs. Add water and mix.

2. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

3. Meanwhile, prepare the filling. Chop the sage and thyme. Cut the apple in half and remove the core. Slice each half into 8 pieces and place them in a large bowl. Dice the sweet potato and cut the onion into wedges, then add to the apples. Add the butter, sage, thyme, and gently mix. Season with salt and pepper, then mix again.

4. Preheat the oven to 200 degrees. Roll out the dough on a lightly floured surface into a 30 cm circle. Transfer the dough to a baking sheet and spread mustard over it. Starting 5 cm from the edge, arrange sweet potatoes, onions, and apples with spices on top. Fold up the edges. Bake until the apples, potatoes, and onions are tender and slightly caramelized, about 55 minutes. While the galette is baking, bring the cranberry juice to a boil and reduce by half. Let the galette cool slightly, then drizzle with the reduced cranberry juice. Cut into pieces and serve.
