Description

The pastry is simple and quick to prepare. Fattir is a traditional Egyptian sweet pie filled with classic maghlabia cream. Once you've made this pie just once, you'll never be able to forget it—and your kids will love it even more. It's incredibly, wonderfully delicious—trust me on this! That's exactly what happened to me. I once came across the recipe for fattir online and decided to try it, mostly because of its unusual name. But when I tasted the result, I was amazed by its incredible flavor. The inside was so tender and juicy it simply melted in my mouth! Today I want to share it with you. Serve it warm or chilled. Perfect with tea.

    Prepare all the necessary ingredients.

    In one glass of warm milk, dissolve the dry instant yeast, add sugar and an egg. Mix well.

    Gradually start adding the sifted flour, stirring the mixture with a spoon.

    When it becomes harder to knead, transfer the dough to a work surface and, adding flour as needed, knead until you get a soft dough. Let it rest for 15–20 minutes in a warm place. Meanwhile, take the butter out of the refrigerator and let it soften.

    Now divide the dough into 2 parts, knead each part and roll it out as thinly as possible.

    Brush each rolled-out layer of dough with butter.

    Roll the dough into a tight log, then coil the log into a snail shape. You should end up with two such snails. Transfer them onto a floured cutting board, cover with plastic wrap, and refrigerate for 2 hours.

    Meanwhile, prepare the Egyptian cream "Maghlabya." To do this, rub the sugar with the egg and starch.

    Add 2 cups of milk and mix well. Place over heat and, stirring constantly (this is essential!), bring to a boil over low heat. Remove the cream from the heat and set it in a cool place (but not in the refrigerator) to cool.

    After 2 hours, take the snails out of the refrigerator. Roll out each one to a thickness of 2-3 cm.

    On one layer of dough, spread the cream (in a thick layer).

    Cover with the second layer of dough on top, and pinch the edges.

    Bake the pie in the oven for 30 minutes (temperature — 180 degrees).
