Description

The recipe won't take much time. We're continuing to break down culinary stereotypes. Many people think that making rolls at home is a very complicated procedure. Not at all! This recipe clearly proves otherwise. And this is far from the simplest way to make rolls! Futomaki with omelet and shiitake are rolls without fish. Those exist too. So if you or any of your diners are skeptical about the idea of eating raw fish, I recommend making futomaki. Good luck with your cooking. You can serve them warm or chilled.

    Trick number one: the rice should not just be rinsed, but rinsed and soaked in cold water for 10–15 minutes.

    Only after that do we proceed to cook the rice. Pour cold water over the rice in a 1:1.2 ratio, bring to a boil over high heat, then cover with a lid and cook for another 12–13 minutes over low heat. Then remove from the heat, but do not remove the lid—let it rest. At the very end, when the rice has cooled slightly, add salt, sugar, and rice vinegar to it.

    While the rice is cooking, prepare the filling. Cut the shiitake mushrooms, previously soaked in cold water for 2 hours, into thin strips. Remove the tough stems.

    Pan-fry the shiitake mushrooms in a skillet until golden brown.

    Now let's make the omelet. Beat the eggs with soy sauce until smooth. Pour half of the mixture onto the skillet and fry it like a pancake. When the pancake is ready, move it to the edge of the skillet and pour the second half of the egg mixture onto the cleared space. Fry until done, then roll one pancake inside the other—and the omelet is ready.

    Peel the cucumbers and cut them into thin matchsticks.

    Spread the rice on the nori sheet in a thin layer and smooth it out. Leave about 2 cm on the far edge untouched (see the photo for reference).

    Place half a sheet of nori on the rice (as in the photo), and spread a little of our filling on top. Various combinations are possible—for example, in this photo, omelet, cucumber, and mushrooms...

    Carefully roll up the resulting roll.

    With a sharp knife slightly moistened with cold water, cut each sausage into 8 rolls.

    Optionally garnish the top with flying fish roe. Serve with soy sauce, ginger, and wasabi.
