
Glass Noodles with Chicken and Mushrooms
Description
A delicious appetizer for any gathering. Glass noodles made with this recipe are quite a self-sufficient dish. It cooks quickly, yet turns out hearty and very tasty! You can change or adjust the ingredients to taste as you see fit. This vibrant Asian-style dish works for lunch, dinner, or a hearty quick snack! Be sure to try it. The appetizer is ready. Serve immediately.

Prepare all ingredients.

Wash the chicken breast and pat it dry. Cut it lengthwise with a sharp knife, stopping just short of the edge, and open it out like a book.

Pour lemon juice over the chicken breast, salt it, and season with spices to taste (I used paprika and a chicken spice blend). Rub the breast on all sides and let it marinate for 20–30 minutes.

Then place the fillets on a heated skillet with oil, cover with a lid, and pan-fry over medium heat on both sides until cooked through. Transfer to a plate and let cool slightly.

Slice the onion into half-rings, cut the carrot into thin matchsticks or grate it on a special grater, and cut the bell pepper into strips. Sauté the vegetables in vegetable oil until tender.

Cut the mushrooms as desired and fry until the liquid has evaporated.

Place the glass noodles in a deep pot (or bowl) and pour boiling water over them (500 ml). Cover with a lid and let stand for 5–6 minutes. Then drain the hot water and rinse the glass noodles under cold water, draining them in a colander. Once the water has drained, transfer them to a deep bowl or directly into a serving bowl.

Cut the cooled chicken fillet into cubes and add to the glass noodles.

Add the sautéed vegetables and mushrooms.

Add soy sauce, salt, and ground pepper to taste. Mix, let the dish rest for a while, and serve.
