
Glass noodles with broccoli
Description
The dish is prepared without unnecessary complications. It's very tasty and cooks quite quickly. It's low in calories, yet filling. Glass noodles are cooked with various ingredients, including meat. Here we have a simple vegetarian version that vegetarians will enjoy and that will add variety to a meat-eater's diet. The finished dish can be served immediately.

1. First, we need to boil the cellophane noodles according to the package instructions. Soak them beforehand for about 20 minutes. Meanwhile, separate the cabbage into florets and boil in salted water until cooked. When the cellophane noodles are done (they should be boiled for no more than 10 minutes), drain them in a colander and let cool.

2. For this dish, Korean mushrooms will be an excellent addition. I used boletus mushrooms. Soybean sprouts, sweet peppers, and other vegetables of your choice will also work well.

3. Peel the onion and carrot, chop and sauté in olive or other vegetable oil until golden brown. It is best to use the traditional cutting method (grate the carrot and slice the onion into half-rings).

4. Whether to cut the glass noodles or not is up to you; I always leave them whole. Add soybean sprouts, sautéed onion and carrot, bell pepper (raw, though you can lightly cook it), as well as boiled broccoli and Korean mushrooms. Season everything with soy sauce. The dish can be served warm or cold.
