Prepare the ingredients. You can use various fruits, including those that are not perfect in appearance. This recipe uses plums, apricots, and peaches.

Wash the fruits, remove seeds, pits, and stems, then cut into pieces.

Before blending, heat them on the stove for 10 minutes; they will become more pliable.

You can add a couple of tablespoons of sugar to the fruit puree if the fruits are not sweet enough. Place the saucepan over the lowest heat and cook for about an hour. I warn you that the puree will bubble, so you can cover it with a lid, but only halfway, to allow moisture to evaporate.

Line a baking sheet with parchment paper, spread the puree to a thickness of about 0.5 cm, and smooth it evenly over the entire surface. Place in the oven at the lowest heat setting with the door slightly ajar for 2.5 to 3 hours. The lavash can also be dried in the sun, but this will take several days.

The fruit leather is ready when it doesn't stick to your hands and appears evenly dried in all areas.

Turn the fruit leather onto another sheet of parchment paper.

Place a towel soaked in cold water on top for about 5 minutes, after which the paper will easily peel off.

Cut the fruit leather into strips using a regular knife or a pizza cutter.

You can roll the lavash into small rolls and tie them with string or thread. In this form, it can be stored in a glass jar. However, it usually doesn't last long because it gets eaten very quickly. This is a delicious and healthy treat—I highly recommend making it!
