    1. It's best to blend the cottage cheese in a blender, as we need a smooth, lump-free, creamy cottage cheese mass. Blend the cottage cheese and sour cream in a blender until smooth and homogeneous.

    2. Now prepare the cheesecake batter. Separate the egg whites from the yolks. Beat 0.5 cup of sugar with the egg whites until foamy. Carefully add flour in parts to the egg whites, along with the remaining egg yolks and vegetable oil. Mix thoroughly. Divide the batter into two equal parts. For baking the cheesecake, you'll need a pan with high sides. Grease the pan with oil and pour half of the batter into it.

    3. Place the cottage cheese mixture on the second half of the dough. Add a pinch of salt, 0.5 cup of sugar, milk, and vanilla sugar. Beat the mixture well with a mixer. Carefully pour this mixture into the pan over the dough. The first layer of dough will rise up the sides.

    4. Preheat the oven to 180 degrees. Bake the cheesecake for about an hour. It should rise and turn brownish in color. Turn off the oven, but do not remove the cake. Let it cool down inside the oven.

    5. While the cake is baking, prepare the berries. Sort and rinse the fresh berries. Pour 2 cups of hot water over them, then drain this water into a separate container. Dissolve the gelatin in a cup of water, then mix it with the water in which the berries were blanched. Place the berries on the cooled cheesecake and pour the jelly over them. Refrigerate for 1.5–2 hours, until the jelly sets.
