In times when candies were still a rarity and no one had ever heard of food dyes or preservatives, mothers used to prepare a wonderful fruit or berry treat for their children—a sheet of fruit puree dried and rolled into a tube. Now is the perfect time for you to learn how to make this delicacy for your entire family.

    1. Wash the fruits or berries, remove pits or cores, discard stems, peels, or zest, and finely chop.

    2. Taste the fruits or berries. If they are very sweet, you will need a minimum amount of sugar; if they are sour, use much more.

    3. Place the fruit mixture in a saucepan. Add water, bring to a boil, cover with a lid, and simmer over low heat for 10–15 minutes. Use a special masher (for mashed potatoes) to mash all the berries or fruit pieces in the saucepan. Taste the fruit mixture once again to finally decide how much sugar and lemon juice to add.

    4. Add spices and sugar to the fruit in small portions (1 tablespoon at a time), thoroughly mixing everything. Simmer over heat until the sugar dissolves completely and the puree thickens (at least 5–10 minutes more), then blend while still warm in a blender until completely smooth.

    5. Place foil or parchment paper on a baking sheet with high edges, spread the purée to a thickness of 3 to 6 mm, and place in the oven for 8–10 hours at 40 degrees Celsius. You can also dry the purée in indirect sunlight (for example, under a metal canopy), in which case the process will take longer.

    6. The ready fruit layers are non-sticky and easily peel off the foil. It's time to roll them up into rolls and serve at the table or treat your friends. This dessert can be stored in the refrigerator for a long time, but don't plan on storing it – it's simply too delicious.
