
Fricassee in wine sauce

In this recipe, I'll show you how to make fricassee in a wine sauce, adding some vegetables to enhance its already amazing flavor. Thanks to marinating, the chicken pieces will become incredibly tender and juicy, while the wine sauce will perfectly complement the dish. First, cut the chicken into portion pieces and thoroughly rinse them. Place the meat into a deep dish, add chopped shallots, leek, carrots, celery, and minced garlic. Pour wine over the mixture and let it marinate for about 6 hours.

After the time has elapsed, we remove the chicken pieces from the marinade and place them on a paper towel to dry. We pour the marinade into a separate container and transfer the vegetables to another bowl.

Now pour peanut oil into the skillet, add butter, and sauté the chicken in this mixture until golden brown, then transfer it to a plate.

Drain excess oil from the skillet (leaving 1-2 tablespoons) and add the liquid in which the chicken was marinated. Simmer over low heat until the liquid reduces by half, then add the vegetables to the skillet. Cover with a lid and simmer for half an hour.

After the time has elapsed, place the chicken in the pan, add 2 cups of water, season with salt and pepper to taste, and simmer for another 20 minutes, covered.

Now transfer the chicken and vegetables to a pot and cover with a lid to keep them warm. Strain the sauce, return it to the skillet, and simmer over low heat until reduced by half. Once the sauce has thickened, place the still-warm chicken and vegetables onto a plate, pour the wine sauce over the top, and serve with any side dish.
