Chicken fricassee with mushrooms

Description

The recipe won't take much time. Preparing mushroom fricassee at home is incredibly easy. You can always vary the classic mushroom fricassee recipe by adding any other mushrooms you like along with the button mushrooms. Serve hot.

    Wash the mushrooms thoroughly, clean, and dry.

    Then cut into pieces.

    Melt half of the butter in a frying pan.

    When the butter has melted, add the mushrooms and sauté for 15 minutes, remembering to stir occasionally.

    In a small saucepan or pot, melt the second half of the butter, add flour, and, stirring constantly without removing from the heat, bring the mixture to a smooth consistency.

    Then pour the chicken broth and wine into the saucepan. Simmer the sauce over low heat for about 15 minutes, stirring occasionally.

    When the sauce reaches a sour cream-like consistency, add the mushrooms and mix thoroughly without removing from the heat. Remove the fricassee from the heat, add the egg yolk, season with salt to taste, add lemon juice and pepper, and mix well.

    Place the mushroom fricassee in a deep plate and serve at the table with a slice of bread.
