
French-style fricassee
Description
The recipe won't take much time. Try preparing French-style fricassee at home, and you will surely surprise your loved ones and even the most demanding guests. Serve with mushrooms as a side dish, as they create a truly delightful flavor combination with the creamy sauce. Serve hot.

1. Take a chicken, wash it thoroughly, and cut it up. Set aside the backs and wings, and use the other parts (optional) to make fricassee. I used drumsticks.

2. Season the cut pieces and salt them. Then fry them on all sides. I melted butter and poured it over at the end of frying.

3. Place the pieces of meat into a baking dish with high sides and sprinkle lightly with flour. Then add the spices, bay leaf, and rosemary. Pour in the broth and wine.

4. Now we can confidently put our meat in the oven for one hour. Make sure the chicken doesn't burn, and adjust the oven temperature as needed.

5. Beat the yolks with the cream and lemon juice. Into boiling broth (a small amount—about 1 cup), slowly pour the egg mixture in a thin stream, stirring constantly. As soon as the sauce begins to boil, immediately remove it from the heat and set aside.

6. As a side dish, I decided to use mushrooms — it turned out pretty good. I sautéed the mushrooms with onions on both sides, placed them on a plate, added the chicken next to them, and poured everything with the prepared creamy sauce. And here's the beautiful result!
