    First, pour olive oil into a frying pan and sauté finely chopped onion until golden. Then cut the pork into small cubes and add it to the pan with the onion. Fry until a browned crust forms, then pour in white wine and continue simmering the meat over low heat. When the wine has almost completely evaporated, add a little water to the pan, just enough so that it doesn't completely cover the pork. Cover the pan with a lid and cook for about 20–25 minutes.

    While the pork is cooking, we pour water into a pot, salt it, and boil the chopped celery and lettuce leaves in it for 10 minutes.

    After 20 minutes of stewing the meat, add the boiled greens to the pan, mix everything, season with salt and pepper, and cook the fricassee for another 10 minutes. Meanwhile, combine the egg yolks with the juice of half a lemon and one tablespoon of water. When the meat is done, remove it from the heat and pour in the egg mixture, stirring quickly. Sprinkle the fricassee with chopped herbs and serve.
