Fish fricassee

Description

The recipe won't take much time. 1. Cut the fish fillet into small portion-sized pieces. I always use fillet because there are no bones to deal with and the meat is more tender. 2. Sprinkle the fish with lemon juice and let it marinate briefly. Then season with salt and pepper. 3. Dredge each piece in flour and fry in a small amount of oil. Let the fish cool. 4. Meanwhile, in a skillet melt butter and fry the flour until golden, then add a little vegetable broth or water. 5. Add mushrooms, mustard, and the fish to the skillet. A minute before it's done, stir in an egg yolk and remove the fricassee from the heat. 6. Serve hot, ideally with boiled rice and vegetables.
